We used THIS RECIPE and just added the Sweet potato bun and the onion rings.
For the sweet potato bun:
Simply preheat the oven to 180C
Was the sweet potato and chop into thick slices – roughly 1.5 – 2cm thick.
Drizzle with coconut oil and pop in the oven turning till golden brown and thoroughly cooked.
For the onion rings:
Preheat some coconut oil in a deep pan or wok (not two much, 1tblsn should suffice).
In a bowl beat and egg.
Pour some buckwheat flour in a separate bowl.
Peel and slice onions, leaving them in circular rings.
Dip the onion into the egg, then into the flour and put straight into your piping hot pan. Depending on the size of the pan you can do multiple rings at once!
Turn with a fork when golden brown.
Serve the lot with the pesto burgers and salsa we showed you in the earlier link!
Delicious with NON of your takeaway guilt!
